So im not going to lie… I did have to try twice to perfect these cookies. But I am so glad I attempted again because they are to die for!! Crunchy on the outside gooey in the centre, and so damn delish! Think a mixture of an Anzac Biscuit and a Choc Chip Biscuit… they taste naughty but the ingredients are wholesome goodness.
Keep these hidden in your desk for when the cravings call and you want to reach for the biccie tin… not only will they curb your craving but your waistline AND guts will thank me. PLUS if you are having some trouble in the tummy (AKA constipation, yeah its poo talk :/) these biccies will help you get things moving!
When I need some assistance moving things along in the tummy department, I whip out the Psyllium Husk as it is a great source of fibre. It literally soaks up the water in your bowels and helps things move along. You can use when you’re in dire need, or you can use it every day to keep your digestive system in tact!
It is also a great little ingredient, as it gives you the feeling of feeling fuller for longer. Which is great if you are trying to watch your weight or over-eating. We all have the tendency to overeat, even when we don’t mean to.
So give these, fibre boosting, choc chip cookies a try! You won’t be disappointed TRUST ME! I have already given a bunch out and I have not had one bad review – winning!! Even the kids love them.

Ingredients (*Chose organic where possible)
- 1 cup Almond Meal
- 1 cup Wholemeal Spelt Flour (or GF Flour)
- 1 cup Coconut Sugar
- 1 tbsp Psyllium Husk
- 2 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Cinnamon
- Pinch Sea Salt
- ½ cup Coconut Oil, melted
- 1 egg
- 1 tsp Vanilla Bean
- 1 cup 70% Dark Choc Chips or Cacao Nibs
Method:
Preheat the oven to180 degrees.
Combine almond meal, Wholemeal Spelt flour, coconut sugar, baking powder, baking soda, cinnamon and sea salt until blended.
In a separate small bowl, combine the coconut oil, the egg, and vanilla extract.
Add the wet mix to the dry mix, and stir until a sticky moist mixture is made.
Line two baking trays with Baking Paper.
Scoop out a teaspoon of dough at a time and place on baking sheet leaving space between each cookie for them to expand.
Bake for approx. 10mins each. They do not take long so keep an eye on the cookies to see when the outer edges become cooked. The centre should still be soft. (as they cool it will slightly cook through more- be mindful of this)
Let cool completely.
