INGREDIENTS
DRY
- 1 1/2 cup gluten free flour (or 1 cup coconut flour)
- 1/4 cupcoconut sugar
- 1 tspbaking soda
- 1 tspcinnamon
- ½ cupdark chocolate chips (or cacao nibs for dairy free option, you can also buy dairy free choc chips!)
WET INGREDIENTS
- 2 banana, mashed
- 2eggs
- 3/4 cups almond milk, unsweetened
- 2 tspvanilla bean extract
METHOD
Preheat oven to 180c.
Combine all dry ingredients in one bowl.
Mash nanas in another bowl, add remaining wet ingredients and whisk.
Combine both wet and dry until smooth.
Transfer muffin mix into cupcake liners in baking tray (to avoid sticking and easy to remove once cooked)
Place in the oven for 20mins, or until you do the toothpick test and it comes out clean.
Serve and enjoy!
